How this site is different
Most kitchen conversion tables use one number per cup and leave out where it came from. Every weight here has a named source, usually two: USDA FoodData Central, the US government's food database, and King Arthur Baking's ingredient weight chart. When they disagree, both figures are on the page, with the one the converter uses in bold, so you can see how much a cup varies and choose.
Unit sizes come from the definitions themselves: NIST Handbook 44 for US cups, spoons and ounces, and the UK Weights and Measures Act 1985 for imperial pints and fluid ounces. Every converter is checked by an automated test suite before each release, including a second, separate implementation that has to agree on several hundred conversions.
